complete with a straitjacketed, frightwigged and lipsticked Robert Smith caterwauling, "Why....caaaan't I be you...."....
Dinner was pretty easy. TC was doing tortilla duty. These were the uncooked flour tortillas that you heat up in the pan. I was cooking up the skrimps with celery. It was an improvised "gobernador" but without the sliced green bell pepper, oregano, and onions.

Our condiments - ready made mango salsa from Fresh and easy, chopped cilantro and green onions.

We also had this chipotle dressing as a dip for our burritos. I thought the taste was a bit too strong to slather over the contents. I like it better in smaller amounts as the flavor can overpower the shrimp and mango.

The dinner table - sparkling pear/apple cider (ooh), the condiments, tortillas waiting to be filled, shredded cabbage (from Fresh & Easy), and the shrimp/celery mixture.

My burrito before wrapping it...I just realized I forgot include sour cream in all this. That would have been a nice touch.

This was a pretty filling dinner...

I thought these came out pretty well. The important thing was, my husband and daughter loved it.
Wanna be Shrimp Gobernador Burritos
Ingredients
olive oil
Shrimp (I used the small already cooked bay shrimp, on sale at F&E for $4.99/1 lb)
Celery (I used 2 ribs, sliced)
1/2 tsp smoked paprika
garlic (minced)
red pepper flakes
black pepper
Meyer lemon juice
Directions:
Saute the minced garlic in olive oil, add the red pepper flakes and smoked paprika until the garlic is fragant and the oil is a nice red color.
Add the cooked bay shrimp (which I marinated in a few teaspoons of Meyer lemon juice)and saute to warm shrimp through.
Add black pepper to taste.
*what was missing, oregano, chopped tomato, onion, tomato puree, bay leaf, lime wedges, and Oaxaca cheese
I always like sauteeing olive oil, minced garlic and smoked paprika as a nice spicy base, especially when I do Gambas al Ajillo.
Here is Marcela Valladolid's recipe from the Food Network for Classic Shrimp Gobernador which utlizes the other ingredients which were missing in mine. Here's a sad substitute that I did, instead of Oaxaca cheese, I microwaved two sticks of string cheese since I thought it would be similar. It melted then got too hard, so that was a bit of a fail. I'll have to get the real thing next time, ha ha.
Missing ingredients aside, Bert and TC still enjoyed our wanna be Gobernador burritos. I know it's not "authentic", so sue me, but hey I made do with what I had.
