With a bit of sweet rice flour on hand, I thought I'd made a dessert to bring to my parents for the family get together...
Last year I made Chocolate Mochi squares since I had leftover sweet rice flour. I remember a recipe from Kirbie's blog that used blueberries so that's what I decided on, Blueberry Mochi Cake. Here are the majority of the ingredients:

minus the 4 eggs and the sugar. I hate photographing white ingredients. Plus I forgot. I also handwrote the recipe because I was too lazy to print it and go back upstairs.
It would have been nice to use fresh blueberries but frozen was what I had on hand...

The blueberries turn the batter a lovely bluish color. I just realized this batter uses a shit-ton of butter and sugar!

My cake smelled so good coming out of the oven. It seemed a bit too "brown" on the top though compared to the other bloggers' versions. If I do this recipe again, I will strategically place more blueberries on the top to make it prettier.

Another thing I should have done was butter or spray the pan with non-stick spray. That would have made it easier for Bert to remove the cake.

The top had a nice crackle to it, but kind of flaked off when separated into squares.

Can't wait to eat this later today!
Blueberry Mochi Cake
Ingredients:
1 lb of sweet rice flour
1 cup of butter (2 sticks, melted)
2 cups of sugar
1 12 oz. can evaporated milk
4 eggs
2 tsp. baking powder
2 tsp. vanilla
2 cups of blueberries (I used frozen)
Directions:
Preheat oven to 350F
Cream the butter with sugar
Add the evaporated milk and mix
Add the eggs and mix
Add the rice flour, baking powder and vanilla and mix
Stir in the blueberries
Pour into 9 x 13 baking pan
Bake 1 hour at 350F
Let cake cool before cutting into squares.
For other bloggers' take on this recipe, refer to the versions seen here:
Kirbie's Cravings (she uses fresh blueberries)
Food Librarian (she uses frozen wildblueberries and also suggests blueberry pie filling)
JustJennRecipes (she uses a pinch of salt)
Hope everyone is enjoying the first day of the New Year so far!
Off we go for the family lunch!
